What's on Your Plate?
...Mini Quiche ...
Mini Quiche are a very versatile meal. You can have them for breakfast, brunch or supper.
Wisk eggs 6 - 8 (I like to make enough for left overs)
Add your veggies (your choice
- brocolli
- spinach
- tomato
- mushroom
- leek
- spices - I have a selection of Epicure ones I use
- salt & pepper
| Mix together |
| Put in muffin tins (I spray with Pam) |
| Add a side of tomatoes and bacon - I bake in the oven with the mini quiche |
| Voila they are ready - 15 - 20 minutes... but check your oven. When they pull away from the sides they are ready. |
| Serve - any left take them for lunch another day. :) |
| A complete meal with Greek Yogurt and fruit and berries. |
