Mini Quiche for Breakfast, Brunch or even Supper

...Mini Quiche ...

 

 

 

    

Mini Quiche are a very versatile meal.   You can have them for breakfast, brunch or supper.  

Wisk eggs 6 - 8 (I like to make enough for left overs)
Add your veggies (your choice
  • brocolli
  • spinach
  • tomato
  • mushroom
  • leek 
  • spices - I have a selection of Epicure ones I use 
  • salt & pepper
  • cheese (not IP friendly)
  • onion   (not cooked for IP - use leeks)


Mix together

Put in muffin tins (I spray with Pam)

Add a side of tomatoes and bacon - I bake in the oven with the mini quiche

Voila they are ready - 15 - 20 minutes... but check your oven.  When they pull away from the sides they are ready.


Serve - any left take them for lunch another day. :)

A complete meal with Greek Yogurt and fruit and berries.
